We are thrilled to introduce our Chef Kim Madsen, who re-joined the Echo Valley team in 2022 after several years of pursuing other opportunities.
Kim hails from Denmark and trained extensively in his home country, starting with his apprenticeship at Søllerød Kro, Guide Michelin Star Inn from 1970 to 1974. After his apprenticeship, he went on to cook in Paris at the Danish House where he – after a trip to the South of France to Paul Bocuse – met Danish Ambassador Hans Tabor, whom he cooked for after moving to Ottawa in 1975, until 1978.
This was just the beginning of an impressive career that spanned decades, including working for the Royal Families of Norway and Denmark from 1980 to 1984. As Executive Chef on Hankø, the summer residence to the Royal Family of Norway, his creations were featured in the USA Magazine Cuisine, in an article about Norwegian Food and Royal Meals.

In Canada since 1995, he has prepared meals for high-profile events like G7 meetings in Halifax – as Executive Chef for Delta Barrington – and worked as Executive Chef across the country in Ontario, Quebec, and British Columbia.
In fact, Chef Kim was Executive Chef at Echo Valley Ranch & Spa for the first 14 years of our operation, and we are delighted to have him back on the team.
Kim Madsen holds a Master Diploma from Cordon Bleu in Paris (1974-1975) and is a member of the Canadian Federation of Chef de Cuisine. He also received a “Cordon Bleu” Medal from NFCC in Norway. We know that our guests will be just as delighted as we are to savour Chef Kim’s creations, as always farm fresh and locally sourced.
When he’s not creating delectable gourmet meals for our guests, Kim loves to connect with and enjoy nature in Echo Valley, happy to be “home” again.
